Catalase
Catalase is a crucial antioxidant enzyme that helps break down hydrogen peroxide into water and oxygen, protecting cells from oxidative damage caused by hydrogen peroxide. First discovered in 1818 by Louis Jacques Thénard, catalase is found extensively in organisms exposed to oxygen. In the human body, hydrogen peroxide is produced for immune defense, cell signaling, redox regulation, and other physiological processes. But its production must be tightly controlled because too much or ill-placed hydrogen peroxide can be toxic and cause serious oxidative damage. This oxidative damage has been associated with a range of age-related issues, from the visible (e.g., white hair and skin) to the invisible (e.g., memory and heart health). By converting hydrogen peroxide into harmless substances, the body's natural catalase plays a vital antioxidant role in our cellular defense mechanisms.*

We grow catalase in a small fermenter (a "seed vessel"), carefully developing it until its ready for the big leagues (enormous fermenters that are up to three stories high). Traditional Uses
Catalase is widely found in nature in nearly all living organisms exposed to oxygen, including bacteria, fungi, plants and animals, and is an essential enzyme for protecting organisms against the oxidative stress of too much hydrogen peroxide. This critical enzyme is actually used in many industries. For example, catalase is commonly used in food processing and packaging to keep food fresh longer (i.e., to help prevent oxidation in food), in contact lens cleaning solutions, in wastewater treatment and even in the textile dyeing industry. Humans can use this antioxidant enzyme to supplement their body’s natural catalase production.*
