It has a very strong smell and a sticky consistency, but is very rich in protein. To make Natto, the soybeans are fermented with the beneficial bacteria Bacillus natto (it is sometimes listed as Bacillus subtilis natto). During fermentation, the Bacilli produce enzymatic peptidases, the most important of which is nattokinase. Nattokinase has been understood to support healthy anti-inflammatory activity. Nattokinase is particularly effective because it enhances the body’s natural ability to fight blood conditions. It does this directly by breaking down fibrin and increases the ability of the body to produce both plasmin and other enzymes that break down blood clots. Serrapeptase is a proteolytic, protein destroying, enzyme from bacteria native to the digestive system of silk worms. It is the enzyme that is responsible for dissolving the silkworm’s fibrous cocoon. Serrapeptase is used for supporting of healthy anti-inflammatory properties and perhaps most importantly its fibrinolytic properties. Also, Serrapeptase has been found to have the ability to liquefy mucus and reduce the bacteria biofilms.
